Brownies are one of my favorite treats - add peanut butter and you have perfection on this side of Heaven. Before I went Keto, I used gluten-free flours because I have been sensitive to carbs for a long time now. since being Keto for 5 weeks now, I feel better than I have felt in at least a year ( I'll save this story for another time). I was so happy to finally get into ketosis, but I didn't want to destroy my efforts either. so I went into my lab ( lol,my kitchen) and created this easy and delicious keto friendly/ low- carb brownies.
Dry ingredients:
1 cup of unsweetened cocoa powder
1 tablespoon of your fav sweetener
1 pinch baking soda
2 tablespoons coconut four
2 tablespoons of peanut butter ( melted)
1 pinch of sea salt
Wet Ingredients:
!/4 cup of coconut oil
2 eggs
1 1/2 cup of almond milk
Mix wet and dry ingredients together well and place in a greased ( with grassfed butter) 6 -inch baking pan
Bake at 350 degrees for 25 minutes
Allow brownies to cool before cutting. this recipe makes 6 servings. I am a mom of 5 and a wife. My family gets to eat whatever they want, so I make a small batch for when I want something. Keto has really helped my see my "food- crutches" and I don't intend on going back . I don't need to "cheat" because I "treat" myself to foods that work for me and keep me feeling well.
